Sometimes I want the fluffy texture of Swiss Meringue Buttercream, but it’s not sweet enough for some. The happy combination is Katie’s Cloud Icing!
1 pound confectioner’s sugar
1 stick (1/2 cup) of salted butter
1/2 cup vegetable shortening
1 teaspoon vanilla extract
4 tablespoons heavy whipping cream
1. Cream butter, vanilla and shortening.
2. Add sugar in 4 parts, blending between additions.
3. Add heavy whipping cream 1 tablespoon at a time, blending between until consistency desired has been reached.
4. Ice desired baked good!
